Baked Moin Moin

Although baking Moin Moin might be considered the unconventional way of cooking our fave beans delicacy, it sure is the easiest, cleanest and fastest way to prepare it. Now, you don’t have to worry about leaves and dirt when preparing your Moin Moin.

Ingredients

Serves – 5 people

4 cups of beans, peeled

3 small Red pepper (Tatashe)

2 serving spoons of Pure Vegetable oil

1 large onion

1 cup of crayfish

1 tin of Corned beef (optional)

1 medium Titus fish, boiled and de-boned

½ cup of smoked prawns (optional)

4 boiled eggs (optional)

Salt

Seasoning cubes

Method

Step 1: Blend the beans, pepper and onion till it forms a smooth paste.

Step 2: Add Mamador Pure Vegetable oil, salt and seasoning to the beans paste and stir.

Step 3: Heat your oven to 180C.

Step 4: Pour your beans paste into 4 medium size baking pans, add eggs, fish, shrimps and corned beef.

Step 5: Bake at 180C for 40 minutes, moin moin should be moist but firm. If it’s still a little runny, bake for an additional 10 minutes.
