Yam Pepper Soup is a South-South delicacy that can certainly be referred to as comfort food. It is perfect for cold days, as it leaves you feeling refreshed and warm. The rich mix of spices gives a delicious taste that is authentic to the African cuisine.
Ingredients
Serves – 4 people
½ kg of yam, diced.
500g Goat meat, cut into chunks
1 medium sized Catfish, washed and cut into pieces. (Optional)
2 tbsp of ground Crayfish
1 big onion, chopped
Scent leaves, a handful
Utazi leaves, as desired
Uziza leaves, as desired
Peppersoup spice, as desired
Ground pepper, as desired
2 seasoning cubes
Salt to taste
Method
Step 1
Put your goat meat, peppersoup spice, salt, pepper, seasoning, crayfish, utazi leaves and ukazi leaves into a large pot and add 1 cup of water.
Step 2
Boil for 10 minutes, reduce heat and simmer for 30-40 minutes.
Step 3
Add 2 cups of water to the boiling goat meat, add the chunks of yam, scent leaves and onions and cook for 30 minutes on medium heat.
Step 4
Add the catfish and shake the pot gently so that the seasoning can mix properly. Don’t stir so as not to break the fish. Taste to check for seasoning, and adjust if necessary.
Step 5
Let simmer for 10 more minutes, check if the yam is soft by inserting a fork into a piece of yam.
