This is a tomato-based Nigerian sauce made with corned beef. It can be eaten with a wide variety of staple foods, and common variations include stew with minced meat
Ingredients

Serves – 3

1 large tin of corned beef

400g chopped tomatoes

1 large onion (chopped)

1 large pepper (chopped)

Seasoning cubes

1 Tomato pureethod

3 cooking spoonfuls of Mamador Pure Vegetable Oil

Curry

Thyme

One chopped clove of garlic (optional)

Method

Step 1

Add Mamador Pure vegetable oil to a frying pan. When hot, add the tin tomatoes, onions, garlic and chopped pepper, then fry for 5 minutes on medium-high fire.

Step 2

Next add the tomato puree and fry for 10- 15 minutes.

Step 3

Now add the corned beef, curry, thyme, seasoning cubes and cook on medium heat for 5 minutes.

Step 4

Turn down the heat and cook for another 5 minutes.
